There’s something about spring that awakensin us a need to eat lighter, fresher flavours. Gone are the hearty roasts and stews that cook all day long. When the air is fresh and clean outside, I want to be out there enjoying it; not huddling over a hot stove. This menu is the perfect meal to celebrate the arrival of spring.
All the traditional seasonal flavours of asparagus, ham, peas and mint. Most of these recipes can be made the day before and gently reheated (who doesn't prefer ham the next day better?!).
